CENTRE fOR fOOD CULTURE IN RøROS

Røros was established as a community and a city because
of copper mining in the mid-17th century. It has, with its
relatively short history and rapid emigration, functioned as a
melting pot of cultures. This has led to a unique character of
the city and gastronomy, of which the inhabitants are proud
and concerned with its preservation and development. Like
the city, with its small compact buildings, the food production
in the region is also of a smaller scale. The small production
has survived the modernisation of the agriculture seen in the
rest of the country, and now finds itself in a time where there
is yet again a focus on and interest in locally and ecological
grown food.
This project aims to create good physical conditions for the
meeting between producers and consumers as mediators and
audience. The task is to create an arena for transmission of
knowledge between farmers, producers and consumers. The
project urges the audience to participate and gain insight into
the different aspects of food processing. At the same time it
encourages the producers to purify and develop their products
and niches anchored in the local food culture. By focusing on
and redistributing the food culture, the inhabitants are able to
reach a greater audience geographically and numerically.
